Lady Henniker comes from 1873 at Thornham Hall near Eye the Head Gardener, Mr John Perkins, was awarded the RHS Certificate of Merit for the Lady Henniker apple which he had developed earlier in 1845. Mr Perkins noted that several bushels of apple pips were sown in soil and over the years were reduced down until only the most promising remained. The tree that came out on top became his favourite and the Lady Henniker was born. The tree was re-established after an absence of almost a hundred years. This distinctively oblong shape cooks to a pale yellow puree.
